HORATIO BLANC DE BLANC BRUT 2015 Vintage
The flagship wine of the Chet & Waveney Valley Vineyard representing a perfect combination of Norfolk’s terroir with the cool climate grapes of Phoenix and Seyval Blanc.
Vineyard: This wine is made from a 3 hectare vineyard close to the church of St. Peter and St. Paul, Bergh Apton. The land is light loam with boulder clay (clay with chalk chips) 1.5m down into the soil, representing a typical terroir of Norfolk’s glacial deposits.
Grapes: 65% Phoenix 35% Seyval Blanc picked by hand between the end of September and first weeks of October.
Length of ageing: This wine has now had over 24 months on the yeast.
Yeast: Lalvin EC-1118 is the original ‘prise de mousse’. It was isolated in Champagne and its use is validated by the Comité Interprofessionnel du Vin de Champagne (CIVC). Its strong competitive character, its ability to ferment at low temperature, good flocculation and excellent alcohol tolerance, make Lalvin EC-1118 an excellent strain for the production of sparkling wines.

Appearance: Clear, medium intensity golden colour.
Nose: Clean, Intensity, Light. Aroma characteristics of citrus; lemon, lime, green fruit: apple.
Palate: Dry, medium acidity, low tannin, medium body, Flavour characteristics; floral, blossom, pear, lemon, apricot, lychee. Medium finish.
